The basic prerequisite for successful and sensitive PCR analyses in food analysis is a clean and concentrated nucleic acid. The variety of sample matrices and therefore the search for a suitable extraction method also poses a great challenge for a food or feed laboratory. Since the quality of the nucleic acid is decisive for the success of the subsequent PCR analysis, there are high demands placed on the extraction protocol. Substances that remain after an extraction influence the PCR result. Spices, herbs, algae, cocoa and other sample matrices may also inhibit a PCR test. Therefore, inhibition controls should be included in the subsequent PCR analysis.
